Crustless Bacon & Egg Quiche

A few weeks ago I had a friend visit over the weekend. We watched Jane Austin films and ate all kinds of goodies! In the morning I made this delicious, easy quiche. For the most part you just blend it all together and pour it in a pie plate…. how easy is that!

Crustless Bacon & Egg Quiche

8 strips of bacon, diced

1 ½ c. milk

½ cup prepared biscuit mix

3 eggs

¼ c. butter, melted

dash of pepper

1 c. cheddar cheese, shredded


Fry or microwave bacon until crisp, crumble and set aside. In blender combine milk, biscuit mix, eggs, butter and pepper; blend for 15 seconds. Pour into greased 9-inch pie pan. Sprinkle bacon and cheese on to of egg mixture; gently press below surface with a fork. Bake at 350° for 30 minutes or until knife inserted halfway comes out clean. Let stand for 10 minutes before serving.
