Sweet Potato Balls

If you want a little bit of a change from the sweet potato casserole this holiday season, try these Sweet Potato Balls, they sure are fun to eat, and will give your guests a surprise in the middle!
Sweet Potato Balls
2 c. sweet potatoes, mashed
1 Tbl. butter, melted
2 Tbl. sugar
½ tsp. salt
6 marshmallows
2 egg whites, slightly whipped
2 c. corn flakes, crushed

Bake, peel and mash potatoes. Add melted butter, sugar and salt to potatoes and mix well. Take a marshmallow and cover with sweet potato mixture, forming a ball. Place balls on baking sheet and refrigerate for 30 minutes. Preheat oven to 350°. Once chilled, roll each ball in whipped egg whites and roll in crushed corn flakes. Place on baking sheet and bake for 15 – 20 minutes at 350° or until golden brown.
