Curried Cauliflower

I thought this month would be fun to branch out from the normal sweets, or meat and potato type recipes. So next time you’re at the store you may want to grab some extra spices that may not be on your spice rack and take a shot at these!

Cauliflower is quite the trend these days, used in pizza crust and as a substitute for pastas, or fried as an appetizer. Curried Cauliflower could be served as a side dish or an appetizer.

Ingredients
  • 1 large head or 2 boxes frozen cauliflower
  • ½ teaspoon salt
  • 1 can cream of chicken soup
  • 1 – 4oz package shredded cheddar cheese
  • 1/3 cup mayo
  • ¾ teaspoon curry powder
  • ¼ cup buttered soft crumbs
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • ¼ teaspoon crushed red pepper

Step by Step Instructions

Step 1

Cook cauliflower in boiled sated water for 10 minutes or per package directions.

Step 2

Mix undiluted soup, cheese, mayonnaise, and curry powder. Add cauliflower. Mix well.

Step 3

Place in greased casserole dish. Sprinkle with buttered crumbs.

Step 4

Bake at 350° for 30 minutes until hot and bubbly.
